Observation: Dirty (with food debris) front/service prep. cooler.
Correction: Please clean & sanitize.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No surface sanitizer.
Wiping cloths stored on prep. counters at the time of inspection.
A slicer is dirty with food debris.
Correction: Surface sanitizer must be available all the time at the bar, service areas, and kitchen (work stations).
Provide buckets with sanitizer solution for wiping cloths.
The slicer must be properly cleaned and sanitized after a work is done (do not leave dirty equipment on the counter).

Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: Missing paper towel at the bar handwashing sink.
No cold water at the kitchen handwashing sink which located front of the prep. area.
Correction: All hand washing station must be properly stocked (with hot/cold running water; liquid soap and paper towel in dispensers).
Comments

Some cleaning has been done.
General sanitation - satisfactory.
Coolers - satisfactory.
Mostly food is covered.
Surface sanitizer - available.

Note: Several violations are remain from the previous report.
- Maintenance.
- Storage/ cross contamination.
- Some cleaning.

Reminder:

All food must be covered (few food items uncovered at the time of inspection in walk-in coolers - rice, pasta, cooked meat).
All food must be off the floor (a bag of onion).
Repair deficiencies.
Clean low level of the under grill cooler (so much food debris).
Keep temperature log for all cold units (do regular maintenance or replace leaking parts). Coolers must be < = 4.0 C.
Eggs must be stored in the cooler.
Ice-scoops must be stored in ice-bath (the service area).
