Observation (CORRECTED DURING INSPECTION): 1. Observed items in the walk-in cooler that are the adequately covered. Also, some containers were stacked directly on top of other food products
2. Single use paper cups used to scoop sugar noted; this is repeated finding. Practice must stop as paper cups are not suitable design nor it is suitable material
Corrective Action(s): Required operator to provide adequate covers for all foods; do not store store foods directly on top of other food products. Required operator to discard the single use cup and use reusable scoop with handle. Operator corrected findings at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Observed several boxes of frozen fish being thawed in their original packaging by the large wash sink. The products were still frozen hard.
Corrective Action(s): Required operator to thaw foods in the walk-in cooler overnight if planning to use them the next day. Or under cold running water. Operator transferred the products to the walk-in cooler at the time of inspection.

*Hand washing stations in the halls did not have liquid soap and paper towel. Ensure to stocked prior to using the halls*
Hot and cold running water available at all sinks
High temperature dishwasher not in good working order; however, the dishwasher can run a low temp with chlorine sanitizer. Operator connected chlorine sanitizer to the dishwasher. Detected 100 ppm of residual chlorine at plate level after final rinse cycle
Hall low temperature glasswashers (total two, one in each hall) in good working order; detected 50 ppm of residual chlorine at plate level after final rinse cycle
Walk-in cooler at 4 C or lower; walk-in freezer at -18 C or lower
Prep cooler used to hold salads for buffet, only turned on when needed. Ensure that the cooler can reach 4 C prior to putting foods into the cooler
