Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: A) Line prep coolers measured between 7 and 10 C. left prep cooler measured less than 4 C in one small area of cavity. The top and rest of bottom of cooler is not maintaining proper temperature. Lids to prep cooler observed open and is likely contributing to excessive temperatures.
B) Under counter cooler not working and at 23 C. Miso paste and Korean paste (undefined) kept in unit.
C) Bar cooler measured 13 C. Adjusted cooler. No change.
Correction: A, B and C. All cooler units must be serviced immediately to ensure they can maintain 4 C. or less at ALL times. Bar cooler products must be moved to alternate cooler immediately. Foods in inserts discarded. Lids to line prep coolers must remain closed when not in use. Re-inspection required.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Dishwasher wash water cycle temperature not adequate. (measured at 42 - 45 C). New booster purchased. Arrival date unknown. Clarify with owner. Final rinse chlorine measured approx. 50 ppm.
Correction: To ensure chemical sanitizing obtains optimum conditions, the water temperature must reach 60 C or manufacturers specifications. This muxt be corrected immediately. Operator must provide timeline for correction and must be completed no later than ten days from inspection.

Front prep cooler repaired and measured less than 4 C.
Under counter cooler at cook line removed.
Wired shelving purchased to replace wood and plastic shelves in back of premises.
Pest control technician visited last week and provided comments and actions pertaining to ants. OK.
general cleaning noted throughout facility and especially notable at dry food containers, display cooler, under and around new shelves, at cook line, walls etc.
*Owner has hired an additional night cleaning staff. Please ensure ALL staff continue to perform cleaning at end of day and don't relay too heavily on night cleaning staff.

Dishwasher wash temperature at 120 F. OK as it currently matches manufacturers specs. Booster on order to ensure wash water temperature gets to 140 F. Owner will email when work is complete.
