Observation (CORRECTED DURING INSPECTION): 1) No surface sanitizer was available in the front area at the time of inspection.
2) Manual slicer was found to have food debris on the blade after cleaning.
Corrective Action(s): 1) While in operation, ensure each food preparation area is provided with a food grade sanitizer to sanitizer food contact surfaces. Quats sanitizer at 200ppm was placed at the front area at the time of inspection.
2) Ensure slicer is properly cleaned and sanitized after each use to prevent potential cross contamination. Slicer was washed and sanitized at the time of inspection.

Observation: Rodent droppings were observed in the back storage area.
Corrective Action(s): Clean and sanitize all area affected with rodent droppings and monitor for pest activity. Contact pest control operator as needed.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Sandwich prep coolers were at 3C.
-Under counter cooler was at 4C.
-Both back coolers were at 4C (used for non potentially hazardous beverages).
-Hot holding was greater than 60C. Meatballs were heated to greater than 74C prior to hot holding.
-Frozen foods thawing in the walk-in cooler.
-Temperatures checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer dispensing at 200ppm.
-Both handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Foods properly covered and stored off the ground.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalent valid until August 24, 2027.
