Observation: Ice machine had brown residue on the inside wall.
Corrective Action(s): Discard ice and clean and sanitize the inside of ice machine as per manufacturer's instructions.

Observation: Rodent droppings noted on the floor beside the chest freezer in kitchen and behind the chest freezer in the hallway.
Corrective Action(s): Remove rodent droppings. Clean and sanitize the areas noted with 100ppm bleach. Provide the last two pest control reports. Email to your health inspector.
Correction date: March 22, 2019.

Observation: As noted in previous inspection report, the tiles at the chest freezer in the kitchen were broken and still had tape on it. The floor around the sink area at the back had broken tiles as well.
Corrective Action(s): Replace the broken tiles noted with tiles that are smooth and easily cleanable.
Correction date: March 25, 2019.

Observation: No one on-site had valid Foodsafe Certificate.

Comments

-General sanitation was satisfactory (some areas to note for cleaning: salad prep cooler unit
- Handwashing sinks supplied with liquid soap and paper towel for handwashing
-Bathroom sinks had hot and cold running water, liquid soap and paper towels.
- Coolers were operating at acceptable temperatures (4C or colder):
- Frontier prep cooler 4C
- Frontier cooler (under freezer) 4C
- Sushi display cooler (left) 4C (right) 2C
- Under counter sushi cooler (left) 3.5C (right) 4C
- Dios cooler 1C
- Sliding door coolers (left) 4C (right) 3C
- Chest freezers were -1C to -19C
- Efi freezer -14C
- Hot holding of miso soup was 80C
- pH of sushi rice 4.5.
- High temperature dishwasher operational. Final rinse at dish surface was 75C.
- Exposed particle board damaged in previous report was repaired as per operator.
- Bleach sanitizer solution (>200ppm) present in spray bottles for use on food contact surfaces. Staff diluted bottle of bleach to 100ppm.
- The water drip from the cooler across from the dishwasher was repaired as per operator. No drip was noted at time of inspection.

*Reminder to throw out the cardboard on the floor at the coolers in the kitchen by end of the day so that the floors can be properly cleaned.
