Corrective Action(s): Ensure pooling of water is cleaned up & seal the tiles.

Observation: Food debris noted in the following area:
-flooring in the dessert preparation area of the front
-underneath the shelving and countertops in the front prep area
-floor around the Flour mixer
Corrective Action(s): clean the above noted areas. Deep cleaning is required for hard to reach areas.

Notes
-all coolers are <= 4 deg. C (cake display cooler, dessert island cooler, etc)
-walk in freezer @ -3 deg. C, food is frozen solid
*continue monitoring freezer temperature to ensure food does not thaw. Freezer should be -18 deg. C.
-handsinks equiped with hot/cold water, soap & paper towels
-sanitizer solution in 3-compartment sink - 200 ppm Quats
-no obvious signs of pests noted during inspection
-staff on site is FOODSAFE certified
-temperature logs for coolers are up to date.
