209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Scoop was stored in crushed oreo container with handle. At the time of inspection, the scoop was partially immersed in the oreo crumbs.
Corrective Action(s): Do not store scoop inside the container. Instead store it outside in a sanitary condition. Staff removed the scoop from container and will wash & sanitize prior to storing it outside container.

Observation: Food debris were observed on the floor under the shelving in back storage area.
Corrective Action(s): Ensure that the facility is maintained in sanitary condition. Remove the food debris/oreo crumbs to prevent any potential pest problems in future.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Walk-in cooler maintained at 3C.
- Walk-in freezer at -11C.
- Stand-up display freezers in front area at -23C.
- 2 door freezer in kitchen at -18C.
- Chest freezer with fries at -20C. Ice build-up was noted in the freezer. Consider defrosting/service.
- Sandwich prep cooler at ~4C.
- Beef patties, gravy/soup hot held at 63C.
- Front under counter freezer at -10C.
- Front under counter cooler at 2C.
- Whipped cream was kept at room temperature for cake making. Staff stated that the time is tracked to ensure it does not exceed 4 hours and are stored back in cooler.
** It is recommended to limit the time of storing whipped creams at room temperature.
- Temperature logs were maintained and found up-to-date.
** Ensure regulatory requirements for temperature is met at all times. Coolers to be maintained at least 4C or less and freezers at least -18C or less.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer pail available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- 1 compartment sink was used for cleaning and sanitizing large utensils.
- Pop machine - customer self-serve area was found clean.
- Ice machine was maintained in sanitary condition with scoop stored outside the machine.
- Vents are serviced every 6 months. No dirt or grease build-up noted at the time of inspection.
- Cream dispenser machines/slush machines are cleaned and sanitized at the end of the day and disassembled and cleaend once every week.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or properly covered.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Back door was kept close to prevent entry of rodents.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.
