Observation (CORRECTED DURING INSPECTION): Dishwasher initially not dispensing any chlorine into the sanitizing cycle. This was corrected at time of inspection and dishwssher is dispensing approx. 100ppm chlorine into the final rinse.
Quat sanitizer in sanitizer containers tested at 0ppm.
Corrective Action(s): Rewash all utensils as instructed.
Change quat solution more frequently ie hourly.

Observation (CORRECTED DURING INSPECTION): Hand sink next to dishwasher initially had a container with rice inside. Container was removed.

*Staff are currently using a "Y" for the monitoring logs both for dishwasher and glasswasher. Write in the approximate sanitizer concentration ie 70ppm chlorine in the daily log.
All cold holding equipment cold holding at <4c
Hot holding at >60c
Glasswasher at 130F and approx. 75ppm chlorine. Soap dispensed into wash cycle.
