Observation: REPEAT VIOLATION - gulab jamun have NOT been lab tested to prove shelf stability as promised. They continue to get held at room temperature despite repeat warnings not to.
Corrective Action(s): Spoke with owner by phone - lab tests are to be submitted THIS WEEK, with results expected early next week.

Gulab jamun MUST be helf at 4C or below!

- along East wall under dry goods containers
- along West wall under shelf
- along West wall, on first shelf up from the floor

Observation: Warewasher on at time of inspection. 1st run reached 56C, 2nd run reached 66C, 3rd run reached 69C
Corrective Action(s): Service this machine to reach a minimum of 71C at plate level (internal temperature).

Staff and manager on site were instructed to manually sanitize ALL dishes and equipment using 100ppm chlorine (bleach) solution. Soak for 2min then allow to air dry

As above violation note states, cleaning is required to remove food for the rodents and deter them from entering the buidling
- also remove extra clutter that has accumulated in the small storage room across from the 3 door freezer

A huge amount of dry, finished product is stored in this back kitchen. Ensure it is ALL fitted with pest proof lids, especially over night.
Note: (cooked) cashew butters in vacuum packs found on site.
Note: use 1 cap of regular bleach for every 1 gallon of water for 100ppm
