Observation: Ants were observed by the wall along the back chest freezer. Ants were found around food debris.
Corrective Action(s): To prevent pest infestation ensure facility is maintained in a clean and sanitary condition. Facility may need to be serviced for pests. Poisons are not to be used in the kitchen.

Observation: Upright cooler unit door handles were dirty and containers inside the cooler unit were also dirty.
Corrective Action(s): Ensure all equipment is maintained in a clean and sanitary condition at all times. Staff who are using gloves must properly change their gloves and not use their dirty gloves to handle equipment and containers.

Observation: 1) A container labelled degrease and all purpose cleaner had a yellow solution. Operator unsure of the contents.
2) Sanitizer pails are not labelled.
Corrective Action(s): 1) Do not store chemicals in mislabelled containers. Chemicals may improperly used. Solution was discarded at the time of inspection.
2) Ensure all chemicals are labelled to prevent accidental mixing or misuse of chemicals.

Comments

-Upright cooler was at 4C.
-Domestic refrigerator/freezer was at 4C/-18C.
-Front chest freezer was at -32C.
-Back chest freezer was at -15C.
-Hot holding was greater than 60C. Hot holding cabinet thermometer registers under 60C. If hot holding unit is unable to maintain 60C, do not use unit for hot holding.
-Cleaning and sanitizing carried out in 3-compartment sink. Sink was prepared with 200ppm bleach sanitizing solution.
-Bleach sanitizer pails were at 200ppm.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice machine clean and sanitary. Ice scoop stored in a sanitary manner.
-Raw meats stored below ready-to-eat foods.
-Washroom clean and sanitary.
-FoodSafe Level valid until June 15, 2023.
