Observation (CORRECTED DURING INSPECTION): Mashed potatoes with cream in warming unit with lid, surface temperature 47C, internal temperature 52.2C.
Hot held from lunch rush.
Corrective Action(s): Operator mentioned pan may not be deep enough to reach the water in steam unit and this will be switched out for a deeper tray.
Operator reheated to 74C.

Observation (CORRECTED DURING INSPECTION): Bar hand wash station blocked by pail of cleaning supplies and drink dump tray. This sink is supplied for hand hygiene.
Corrective Action(s): Staff removed items in the sink.
Staff were observed to wash hands during the inspection once this was removed, thank you.

Observation: Rodent droppings visible underneath dishwasher counter behind garbage in dish pit.
Corrective Action(s): Clean and sanitize the area, remove all rodent droppings. Ensure appropriate personal protective equipment is worn. (Today)

Call a pest control contractor to fully inspect and place appropriate traps inside and outside the facility. (Today)

Observation: Water is pooling under dishwasher and appears grey/white, about 1m square area of space.
Tiles are missing from this area on the floor and it is not sloped to drain to floor drain.
Hole for various connections in wall connects this space to next room behind the wall.
Pooling water also visible on other side of wall on floor. Deterioration of wall visible; peeling baseboard.
Corrective Action(s): Ensure all water is removed on both sides. (Today)
Ensure to monitor the area for crawling and flying pests. (Today)
Patch area with concrete/tile or other cleanable material and ensure it slopes towards the floor drain. (3 months)
Patch other side of wall and floor to ensure this area does not have pooling water that attracts pests. (3 months)

o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Staff and public washrooms appear clean and are fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C or hotter - gravy (71C), soups (67C)

Food Processing and Food Protection
o Cooling - Cooling for broth appears to be done in small batches
o Food Storage - Food is stored in covered containers. Walk in coolers and freezers are well organized.
-Raw meats are stored on the lowest shelf and coolers are organized to prevent cross contamination, great job

Maintenance and Sanitation
o Dishwasher - 100ppm Chlorine sanitizer
-Food prep is on counter above dishwashing area. Ensure food prep does not affect clean dishes underneath. Operator said dishes are rewashed before use.
o Glasswasher - Glass washer between 12.5 to 25ppm Iodine
o Chemical dispensers - 200ppm Quat sanitizer dispensed from tube in wall
o Sanitizer bottles - have 200ppm Quats (400ppm measured); storage of chemicals is separate and away from food
