Observation: Cleaning required throughout. The facility requires extensive cleaning including but not limited to the following areas:
- Sushi area - all surfaces, cupboards, shelves,
- All trolleys
- Shelves of dish storage area
- Shelves of dry storage area
- Inside microwaves
- Floors
Etc.

Corrective Action(s): Ensure cleaning occurs. Facility currently has a large amount of food debris on floor that could contribute to a pest infestation. Current cleaning frequency unacceptable. Health Inspector arrived prior to start of lunch rush and it is apparent that cleaning of floors did not occur last night.
Facility has had major pest infestations in the past. Lack of cleaning is a contributing factor to pest infestations.

Observation: Under counter cooler seal needs replacement. This has been discussed on previous TWO inspections and since October 24, 2018. Staff explained cooler seals can not be replaced and doors have to be replaced as they are malfunctioning.

- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (79.9) Degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Ice machine and scoops in good sanitary condition
- Raw meat stored away from Ready to Eat food items
- Receipts available for inspection
- Sushi rice at pH 4.2 or less
- Clean in place for Sushi machine - 200ppm Chlorine used according to sushi chef
- Hair restraints in use
