Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: [REPEAT VIOLATION] Ice machine observed with pink mildew/mold on inside. Operator discarded ice and began cleaning and sanitizing the machine during time of inspection.
Correction: Discard all ice from the ice machine. Ensure ice is obtained from an approved source to be used for cooling sprouts and to hold in-use utensils. Clean the ice machine with soap and water and sanitize with 100 ppm bleach solution (as per manufacturer label). Clean and sanitize the ice machine frequently to prevent mold build up. Failure to clean and sanitize may result in progressive enforcement action.

Follow-up Inspection Conducted

Observations:
- Ice machine has been cleaned and sanitized - observed in sanitary manner during inspection
- General sanitation of premise is satisfactory
- Sandwich cooler measured at 4'C (top and bottom)
- Hand washing stations supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in spray bottle and in pail with wiping cloth measured at 200 ppm chlorine concentration
- Bubble tea pearls observed stored in ice bath
- In-use rice scoops/utensils observed stored in ice bath
- No signs of pests during time of inspection
- FOODSAFE Level 1 trained staff available on site

*NOTE: QUATS dispenser has not been repaired to dispense 200 ppm QUATS. Bleach sanitizer at a strength of 200 ppm in sanitizer pails is in use for the meantime as food contact surface sanitizer. Operator mentioned that they are preparing fresh bleach solution daily. Follow-up inspection will be conducted in regard to malfunctioning QUATS dispenser at the mop sink.
