Observation (CORRECTED DURING INSPECTION): Staff were observed wiping hands on aprons after handwashing.
Corrective Action(s): Ensure staff properly dry their hands with a single use method to prevent recontamination of hands. Reviewed proper hand hygiene practices with staff.

Observation (CORRECTED DURING INSPECTION): 1) Meat was stored next to the dishwasher table (potential splashing from dishwasher)
2) Broccoli was stored on cardboard.
Corrective Action(s): 1) Ensure foods are stored in a manner which protects if from potential contamination. Meat was relocated at the time of inspection.
2) Discontinue the practice of storing food on cardboard. Cardboard may potentially contaminate foods.

Observation: Floor by grease trap was lined with cardboard.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Both upright freezers were at -18C.
-Front service area refrigerator was at 4C.
-Front service area chest freezer was at -18C.
-Hot holding was greater than 60C.
-Hot potentially hazardous foods properly cooled and were probed at 4C or less.
-BBQ pork was being cooked at the time of inspection.
-Foods stored out at room temperature during the lunch rush returned to the cooler during quiet times.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail in the kitchen was at 100ppm.
-Laminate cutting board placed over the wooden chopping block to chop meats.
-Foods were stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe Level 1 valid until August 5, 2023.
