High temperature dishwasher repaired. measured 75.7C at the dish surface and machine was able to consistently give final rinse temperatures over 200F for several cycles. Review with staff that dishwasher final rinse temperatures must be checked daily and that if the gauge indicates that final rinse is not achieving 180F or higher, the machine is not to be used and repairs are imperative.
