- Cleaning has been completed, no rodent droppings observed, clutter in the back gone
- Cleaning of the back two door cooler are complete, cooler is a lot more organized
- Food containers have been cleaned, please ensure sauces and drippings are wiped off and not accumulated to become a sticky residue.
- Spray bottle of bleach water sanitizer measure 100ppm
- Ice machine not currently in use and has been cleaned. Pointed out some spots where mold is still observed.
>>> Operator will clean and sanitize before turning the ice machine back on.
- No food observed in the insert level of the back prep cooler.
>>> Operator will only use the insert level for rushes. Food stored at insert level during a rush must be discarded after the rush.
>>> Operator will see if the technician can service cooler.

Note:
- Do not defrost at room temperature. Frozen salmon observed at room temperature.
- Discussed with operator about the tempura batter. Old tempura batter observed left on the counter by the deep frier. Please ensure batter is only kept at room temperature for 2 hours and must be discarded after.
