Observation (CORRECTED DURING INSPECTION): Dairy based samples stored at room temperature without time stamp. Products were made less than 2 hours prior as advised by staff.
Corrective Action(s): If you wish to provide potentially hazardous food samples, there must be a time log (i.e. time out). Products can be out no more than 2 hours. Operator to develop log for staff to use (1 day).

Observation: Pre-made sanitizer solution for manual warewashing and spot sanitizing had 0 ppm chlorine detectable.
Corrective Action(s): Directed staff to remake (must be 100 - 200 ppm chlorine). Suggest keeping solution in a closed container to prevent dissipation (lost of sanitizer strength), or make fresh each time when doing manual warewashing. Use your test strips to verify.

Observation: No staff on duty had Foodsafe certification.
Corrective Action(s): Operator to register additional staff in foodsafe --> forward copies of registration to EHO by Nov 28, 18. In the meantime, shifts must be scheduled so at least one member on duty has Foodsafe.
