Observation (CORRECTED DURING INSPECTION): The following potentially hazardous foods were discarded due to temperature abuse (temperature indicates an internal temperature):
- 8 bowls worth of cooked ramen (20C)
- ~15 boiled eggs (22C)
- 1 container of cooked sliced pork (22C)
- 1/2 container of bamboo shoots (21C)
- 1/2 container of black mushroom (21C)

Observation: Accumulation of mould and mildew-like deposit was detected at the upper compartment of the ice machine.
Corrective Action(s): Discard ice. Clean and sanitize the ice machine as per manufacturer's direction. Correct this by: immediately.

Observation (CORRECTED DURING INSPECTION): 1. Low temperature dishwasher had no detectable sanitizer residue at the plate level. The sanitizer bottle connected to the dishwasher was empty. The sanitizer bottle was replenished at this time. Detected 100 ppm chlorine at the plate level after a cycle.
2. (Repated violation) Food contact sanitizer was not available at the time of inspection. 100 ppm bleach sanitizer was prepared at this time.

Observation: 1. (CORRECTED DURING INSPECTION)(Repeated violation) Hand washing sink by the ramen station was obstructed by ramen strainer. Ramen strainer removed at this time.
2. Hand washing station next to 2 compartment sink was obstructed by metal shelf. The hand washing station was leaking by the P-trap.
Corrective Action(s): 2. Remove metal shelf that is blocking the hand washing station. Discontinue the use of the hand washing station next to the 2 compartment sink. Service the leaking issue. Correct this by Feb 16 2022

Observation: 1. (CORRECTED DURING INSPECTION) Open can of pineapple, bamboo shoots and coconut milk stored in its original can. These items were relocated to food grade container at this time.
2. Noted multiple foods stored in coolers that were not covered.
3. (CORRECTED DURING INSPECTION) Observed raw eggs stored above cooked meats. Raw eggs relocated at this time.
4. (CORRECTED DURING INSPECTION) Observed boxes of foods that were just delivered on the floor directly. Kitchen staffs started to relocating foods into coolers at this time.
Corrective Action(s): 2. Provide an adequate cover for every foods on the premise (e.g., lid, aluminum foil or plastic wrap). Correct this by Feb 16 2022

Observation: Sanitation improvement required in the following areas:
- Surface of rice cookers, ice machine, cabinet doors
- Shelf located in between hand washing sink and cook line.
- Shelf located behind the cook line.

- Old looking rodent dropping by the back door.
- Dry food debris under the dry storage shelves.
