Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Sandwich display cooler registered at 5.4C. Single door cream cooler required at 7.4C. Temperature log indicates display cooler has been at 5C or 6C for the last few weeks.
Correction: Move all potentially hazardous foods to a working cooler that is able to maintain a temperature of 4C or below. Service/repair coolers so they are always able to monitor a temperature of 4C or below. Note: The purpose of checking temperatures and keeping a log is to take corrective action when needed (ie. when temperatures are above 4C). Staff was instructed to move food during the time of inspection. Date to be corrected by Immediately.

Sandwich display cooler registered at 3.8 C.
Single door undercounter cooler registered at 3.9 C.
Two door undercounter cooler registered at 4 C.
Good job.

Note: Temperature log states cooler temperature must be 4-5 C and freezer temperature must be -15 C. This is incorrect.
Legal temperature requirements are:
-Coolers must be at 4 C or below.
-Freezers must be -18 C or below.
-Hot holding must be 60 C or above.

Update food safety plan to include corrective actions when these temperature limits are not maintained.
