Observation (CORRECTED DURING INSPECTION): - Raw chorizo sausage stored in front refrigerated store display was above 4C. Internal temperature of chorizo: 9.4C, 10.5C
- Temperature inside refrigerated display: 11-13C
- Chorizo had been in unit for greater than 2 hours after being transferred from walk-in cooler.
Corrective Action(s): - Discard any potentially hazardous foods which were above 4C for 2 hours (or more) or if time is unknown.
- Chorizo sausage which was in front display was discarded by staff at time of the inspection.

Observation (CORRECTED DURING INSPECTION): - Jars of salsas were present in food premises which were not labelled properly and appeared home prepared:

- Arbol + Olive Oil (5)
- Serrano + Tomatillo (5)
- Arbol + Tomatillo (3)
- The above products were on the counter in the front service area.
- Operator reported products were not from an approved source.
- This is a repeat violation.
Corrective Action(s): - Discard all of the above specified food products - completed by staff at time of inspection.
- Do not sell or offer for sale any food products which are not from an approved source.
- Keep receipts/invoices for food products and provide to EHO upon request.

Observation (CORRECTED DURING INSPECTION): - Packages of raw meat and a tray of raw eggs were observed to be stored above produce (corn, mango, tomatoes) in walk in cooler
- Note: Walk-in cooler has designated shelving for raw meats away from the produce and ready to eat items; however, the above items appeared to have been put away not in the desginated area.
Corrective Action(s): - Follow food safe practices for food storage so that food is protected from contamination.
- Store raw meat and raw eggs beneath or away from ready to eat products and produce.

Observation: - Multiple flies noted throughout premises.
Note: Two fly lights present. Pest control contract in place with monthly service.
Corrective Action(s): - Ensure high level of sanitation is maintained so that sources of foods and moisture for flies are eliminated.
- Have Pest Control Technician provide additional service to address fly issues - note: Operator has additional service scheduled.

Observation: - Store front refrigerated display was at 11-13C inside.
Corrective Action(s): - Repair refrigerated display so that it is operating at 4C or colder. Do not store any potentially hazardous foods in store front refrigerated display until it is operating at required temperature. To be corrected by: 02-Jul-2023

- Liquid soap and paper towel available for handwashing
- Walk-in cooler 4C

- Freezers were maintaining products in a frozen state
- Bleach sanitizer solution (200ppm chlorine) present for sanitizing food contact surfaces and equipment. Label spray bottle to indicate contents.
- Operator reported food contact surfaces and in use equipment (band saw) are cleaned and sanitized every 2 hours
- Dishes are washed with manual dishwashing method in 2 compartment sink. Operator is knowledgeable about manual dishwashing steps - wash, rinse, sanitize, air dry.
- Supplies present for manual dishwashing: Plugs/stoppers, chlorine test strips, sign posted for reference.
- Staff washroom was supplied with liquid soap and paper towel
