Observation:
- Dust accumulated on ceiling around the vent in the kitchen.
- Stain & grime build up on the edge of rice bin.
- Grime build up on the inside of ice machine.
- Food debris build up observed on knife holder and on the bottom of the slide door cooler at the back.
- Debris build up in the tool compartment drawer where peelers are located.
- Rodent droppings observed on floors of the dry storage room and equipment room.
- Walk-in cooler, freezer, and storage are over stocked. Items stored directly on floor.
Corrective Action(s):
- Ensure to clean items listed above. For ice machine, turn the machine off and empty the compartment before cleaning & sanitizing. Spray the areas affected with rodent droppings with 1000ppm bleach sanitizer (made by mixing 1 part bleach to 50 parts water). Re organize storage so that items are 6 inches off the floor.

- All handsinks are fully equipped.
- All coolers at 4C or below.
- All freezers range from -12C to -18C.
- Hot held rice and soup at 60C or above.
- Bleach sanitizers available in buckets and in spray bottles measured at 200ppm.
- High temperature dishwasher reached 71C or above during the final rinse.
- Ventilation hood panels in sanitary condition.
- Overall kitchen sanitation is maintained.
- Monthly pest control/monitoring by Abell pest control company.
- Back door was open but door screen in place - good.
