Observation (CORRECTED DURING INSPECTION): Utensils including cheese grater and knives had food debris and grime.
Corrective action: Place the utensils into the dishwasher after scrubbing off the grime. Ensure that all utensils are properly washed, rinsed and sanitized to kill bacteria.

Observation (CORRECTED DURING INSPECTION): Raw fish in container was stored at the top shelf of refrigerator above cooked foods and tomatoes. Fish was relocated to bottom of fridge. Ensure that raw foods are stored below cooked foods are stored below cooked foods to reduce the chance of cross-contamination.

Observation: Floor underneath equipment and dishpit is visibly filled with food debris. Sweep all areas of restaurant after each day and be mindful of gaps and tight spaces under equipment. Keeping your facility in sanitary/clean condition reduces the chance that food will be contaminated.

Observation: Multiple items were observed with materials that require change:
1. Wooden shelving was used to store equipment (one shelf above 3-compartment sink, two shelves above the dishwasher)
2. Grocery bags used to directly store ingredients in walk-in freezer.
Corrective action: The following corrective measures need to be taken:
1. Paint over the wooden shelving or line it with a waterproof, washable liner, so that the shelving can be easily cleaned and does not absorb moisture.
2. Store products in their original packaging or in food-grade containers/bags.
Grocery bags are not food-grade and may contaminate food.

Comments:
-Dishwasher achieved final rinse chlorine residual of 50 ppm at the plate.
-Handwash sink equipped with hot/cold running water, liquid soap, and paper towels.
-Customer washrooms were sanitary and sink also had hot/cold running water, liquid soap, and paper towels.

Temperatures:
-Cooler (stand-up refrigerator): 3C
-Chest freezer: -20C
-Chest freezer (dry storage): -18C

Note: Cooler fridge in dry-storage is at 15C. Only non-perishables were in the cooler including pop cans and pre-packaged, sealed /unopened processed lettuce. Do not store meats or other perishables in this cooler until health inspector has confirmed that it can operate at 4C or lower.

Pest Activity:
-Several flies were noted at back entrance hovering over empty pop cans. Empty the recycling each day so that flies are not attracted to the back entrance.

Other recommendations:
-Use test strips to check the dishwasher final rinse and the spray bottle. Remember that only a operator capful of bleach is required per spicy bottle.
-Consult a plumber to check the sink in the men's restroom.
→increasing the flow results in "hammering" which could damage the pipes.
