Observation (CORRECTED DURING INSPECTION): Potential pest damaged packaged food products were observed within main dry storage area. Bags were observed with what appeared to be chew holes.
Corrective Action(s): Potentially pest damaged products along with any products that were not properly protected from pest contamination (e.g. open bags and/or boxes) were discarded by staff at the time of inspection. The following items were discarded:
1. One large box of crackers
2. Two small boxes of pasta
3. Four small bags of barley
4. One bag of black sesame seeds
5. One small insert of sundried tomatoes.
Ensure that all food products are protected from potential pest contamination. Once opened, packaged food products should be transferred to appropriate pest proof containers with tight fitting lids to protect from potential contamination.

Observation: Rodent droppings observed in the following areas:
- On lowest shelf below prep table in main prep area (2 droppings)
- On floor of dry storage area (few droppings)
Corrective Action(s): 1. Ensure that all affected areas as noted above are properly cleaned and sanitized
2. Ensure that before the commencement of daily operations, all equipment/utensils/food contact surfaces are properly sanitized.
3. Ensure that food and utensils are stored in a manner that protects from potential pest contamination (i.e. in appropriate, tightly sealed, pest proof containers). Note: Rodents may potentially lift lids that are not tightly sealed.
4. Seal any holes/gaps to prevent potential entry of pests.
5. Continue to follow recommendations of pest control operator to further limit pest activity.

Observation: A small gap observed on bottom between north side double doors. Door strip is peeling in this area.
Corrective Action(s): Ensure that any gaps are properly sealed to prevent potential pest entry. Have door strips repaired/replaced as needed to properly cover any gaps. Date to be corrected by: February 26, 2019.

Routine inspection conducted:

- Coolers at 4 degrees C or less. Raw animal products and ready-to-eat foods are properly organized.
- Walk-in freezer at -22 degrees C
- No hot holding at time of inspection
- Reviewed cooling procedures with staff on site--no concerns.
- Bulk dry storage food items are stored in pest proof containers with lids
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing stations
- Low temperature dishwasher measured 72 degrees C and 100 ppm chlorine in rinse residual at utensil surface.
- Quaternary ammonium compounds (quats) sanitizer measured 200 ppm in labeled spray bottles
- Ice machine in sanitary condition. Scoops stored safely at time of inspection.
- Temperature records maintained.
- Pest control reports reviewed for the last six months. Premises is serviced by a professional pest control operator. Most recent pest control report dated February 13, 2019 indicated rodent pest activity. Reminder to ensure that all recommendations of pest control operator are followed.
Follow up inspection to be conducted within one month.
