206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): The internal temperature of the hot dogs in the "blue" zone in the second roller unit were between 50-54 degC. The hot dogs were discarded during the inspection. Time of inspection was around 2pm. The temperature log sheet had a recorded temperature of 148 degF (64 degC) at 2pm. There are two roller units on-site. The temperature of the foods on the first unit was above 60 degC.
Corrective Action(s): Since there are two roller units on-site, check food temperatures in BOTH units when doing temperature checks to ensure that proper hot holding temperatures (60 degC or above) are being maintained. Ensure that the arrow on the temperature dial is at least in the "blue" zone and not under it like it was for the second roller unit at the time of inspection. Temperature was increased during inspection.

Observation (CORRECTED DURING INSPECTION): There was no paper towel in the dispenser at the kitchen hand sink
Corrective Action(s): Check regularly to ensure that the soap and paper towel dispensers are fully stocked. Dispenser was refilled during inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Bins used for breading were not sifted and were sitting at room temperature. As per manager, the breading in the bins were to be discarded and the bins cleaned. The potato slicer is relatively clean, but the top part of the slicer still has pieces of potato which need to be scrubbed out. However, the pieces do not look like they've been in the slicer for too long.
Corrective Action(s): Ensure that staff are washing and sanitizing the bins as soon as they're done using them as discussed. Also, ensure that staff are removing and scrubbing the top and bottom part of the potato slicer when they clean it.
