Observation (CORRECTED DURING INSPECTION): Drinking glassware was not being properly sanitized; 0 ppm chlorine residual detected at the glass surface after glasswasher's cycle.
Corrective Action(s): All glassware to be washed in the main kitchen's dishwasher until the glasswasher is repaired.
Ensure to check glasswasher sanitizer concentration with chlorine test strips on a daily basis.

Observation: Glasswasher's sanitizer concentration was at 0 ppm (chlorine residual).
Corrective Action(s): Service the glasswasher. Sanitizer concentration tested at the drinking glass surface after the cycle should be at 100 ppm chlorine residual. Wash all drinking glassware in the main kitchen's dishwasher until the glasswasher has been serviced.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer dispenser has been installed at the mop sink, dispensing at 200 ppm. Sanitizer solution available in spray bottle and sanitizer pail at 200 ppm (quats). Test strips available for monitoring.
- Main kitchen dishwasher was sanitizing dishes at 100 ppm (chlorine residual), detected at the dish surface after final rinse cycle. Good. Chlorine test strips available for monitoring.
- Glasswasher using chlorine-based sanitizer was not working properly (see violation codes 302 and 308 above). Glasswasher to be repaired and all glassware to be washed in main dishwasher in the meantime.
- Walk-in cooler, prep coolers, bar coolers measured at 4C or colder.
- Undercounter freezer temperatures were satisfactory.
- Daily temperature logs maintained
- Reviewed cooling procedures at time of inspection - OK.
- Good food storage practices noted. All food stored off the floor, properly covered, with good separation between raw and ready-to-eat food items.
- Dry storage area upstairs satisfactory. All dry ingredients stored in pest-proof containers.
- All equipment maintained in sanitary conditions. *Note: operator is using a new dosa flour grinder onsite. Grinder can be disassembled and parts can be placed in dishwasher for washing - OK.
- Facility maintained in good sanitary conditions.
- Pest control is in place, with weekly visits. Reports available onsite for review. Holes have been sealed and activity has decreased. Please continue monitoring for activity and cleaning on a daily basis.
