203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): An insert of cooked beef at 41C was placed into a cooler.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Do not place hot foods in the cooler - it will raise the cooler inside the cooler. Cooked beef was placed on a shallow tray to cool to room temperature at the time of inspection. Once the beef has cooled to room temperature, transfer the shallow tray of beef into the cooler to complete the cooling process.

Observation (CORRECTED DURING INSPECTION): Condensed milk labelled "Refrigerate After Open" was stored at room temperature. Can of milk was opened today
Corrective Action(s): Ensure all food items are stored as per manufacturer's instructions. Condensed milk was placed in the cooler at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Manual vegetable slicer was found to have old carrot debris between the blades and meat slicer was found to have meat debris behind the blade guard.
Corrective Action(s): Ensure all equipment is properly disassembled after each use for cleaning and sanitizing. Equipment was washed and sanitized at the time of inspection.

Observation: Bleach sanitizer spray bottle was unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing and or misuse of chemicals. Containers will need to be relabelled as required.

Comments

-Prep cooler was at 4C (top and bottom).
-Display cooler was at 4C.
-Under counter cooler was at 4C.
-Chest freezer was at -20C.
-No hot holding at the time of inspection.
-Cleaning and sanitizing carried out in the 2-compartment sink. Warewashing signage posted and sink plug and bleach sanitizer available.
-Bleach sanitizer spray bottle was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods properly stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection. Tin cats did not have any signs of pests. Operator stated the facility is serviced weekly for pests.
-FOODSAFE Level 1 valid until February 25, 2023.
-Please contact the inspector if you have any questions or concerns.
-Operator signature not required at this time due to the COVID-19 Pandemic.
