Observation: Back dry goods storage area observed with at least one rodent in a trap, and droppings around perimeter of room
Corrective Action(s): 1) Discard unused equipment. Organize room
2) Clean up rodent droppings by mixing 9 parts water to 1 part bleach, spraying the droppings, then wiping up while wet
3) Call your pest control company for an inspection/ servicing
4) Follow instructions & recommendations on pest control report
5) Continue monitoring infestation. Clean up droppings as above

Hand sinks supplied with liquid soap, paper towels, hot/cold running water
All coolers 4C or less
Freezers all operational, varying from -6C (walk in freezer, in use) to < -20C in chest freezers
Temperature available on request, have been neglected over the past few weeks. Please resume use immediately
Bleach sanitizer tested in rag buckets at 100ppm
Dishwasher reached 50ppm chlorine sanitizer residual. Test strips available for use. Please also check this machine daily and record it in your logs
No hot holding at time of inspection
Dipper well operational and in use. Good
General sanitation of facility satisfactory with exception of dry storage back room. (See above violation)
Ice maker in front has a small rim of mould or algae growth along upper edge of machine. To clean out this system:
- turn it off any empty out all ice & water
- wash it out with warm, soapy water, and a small brush to reach hard to reach areas
- rinse
- sanitize with a food grade sanitizer (100ppm bleach). Allow to air dry. Discard your first batch of ice
**Please keep ice scoops in a clean container and not just on the top of the machine. Wash the scoops and containers
Restaurant function of facility has decreased, spending more time on ice cream production.
