Observation (CORRECTED DURING INSPECTION): Pastries held at room tempearture have a 6 hour holding time. Observed time on time tracking sticker stating product is to be used before 12:30pm. Inspection was conducted at 3:00pm.
Corrective Action(s): Product discarded at time of inspection. Be sure to monitor your time tracking stickers/charts.

Observation: Dishwasher at 0ppm Cl. After priming, machine tested at 10ppm and then flooded.
Corrective Action(s): Repair dishwasher and ensure it is able to maintain a 50ppm Cl residual. In the interim use the 3 compartment sink method with a 200ppm quats solution.
