Observation (CORRECTED DURING INSPECTION): 1. Dried on debris noted on the blade of the can opener.
2. Tongs used for pulling out wings from the oven were stored in an unsanitary manner - hanging on a wooden crate below the oven.
Corrective Action(s): **Issues corrected during the inspection**
1. Operator cleaned the can opener when issue was brought up to him. Please clean and sanitize the can opener every 4 hours or when it gets overly soiled.
2. Operator removed the tongs and was instructed to store this tong in a sanitary manner.

Observation (CORRECTED DURING INSPECTION): 1. < 10 PPM chlorine residual detected in the sanitize basin of the 3-compartment sink.
2. Observed the operator cleaning parts of the meat slicer during the inspection. Did not see the operator sanitizing the parts after the cleaning step.
Corrective Action(s): **Issue corrected at the time of inspection**
1. 200 PPM chlorine residual was detected in the sanitizer basin of the 3-compartment sink after the operator refilled the sink.
2. Operator was reminded to sanitize all food-contact items that are washed with the 3-compartment sink. Operator sanitize all washed parts from the meat slicer.

Observation (CORRECTED DURING INSPECTION): Chopped mushroom noted stored in cardboard boxes.
Corrective Action(s): **Note: This is a repeated violation** All processed food must be stored in a food-grade container that can be cleaned and sanitized. Operator discarded all the cardboard boxes and transferred the mushrooms to food-grade containers.

Observation: 1. Grease and debris buildup noted on the wall below the prep counter by the dough mixer.
2. Dust buildup noted on the ceiling vent and surrounding area above the clean side of the dishwashing area.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

No signs of pest activities noted during the inspection.
