304 - Premises not free of pests [s. 26(a)]
Observation: A small amount of rodent droppings were observed in the following areas:
-below the cooking equipment for the pitas,
-lower counter surface below the cash register used to store debit receipts,
-the corners and floor near the back storage area and backdoor, and
-in a cardboard box containing dishwashing detergent bottles.

Note: No rodents were present inside the mechanical traps at the time of inspection. Food was covered in pest proof containers and 100 ppm chlorine sanitizer was available in the spray bottle and third compartment sink.
Corrective Action(s): Clean the above noted affected areas with bleach water today to remove the rodent droppings and check again tomorrow for signs of recent pest activity (repeat droppings, holes in the building, dead/live mice). Ensure all prep. surfaces and food equipment are washed, rinsed, sanitized, and air dried prior to use. Cover the dough mixers and onion containers overnight. Store all equipment off the floor. Contact a pest control company and provide the district E.H.O. a copy of the pest control report.

Observation: A gap was observed in the backdoor and the front door was left wide open at the time of inspection.
Corrective Action(s): A staff member closed the front door upon verbal direction by the area E.H.O. Keep the doors closed and reseal the screen at the backdoor to prevent a gap. This will prevent further rodents (mice/rats) from entering the food premises. Correct today.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The ventilation hood was not in good working order. Staff is already aware of this issue and mentioned that they would have it repaired by tomorrow.
Corrective Action(s): Repair the ventilation hood to maintain it in good working order. Contact the area E.H.O. once the ventilation hood fan has been repaired within 2 business days.

Comments

Permit to operate was posted.
All four handsinks in the food prep/service area and washrooms were supplied with liquid soap, hot and cold running water, and paper towels.
Coolers were 4 degrees C / 40 degrees F or less.
Freezer was -18 degrees C / 0 degrees F or less.
Hot-held meats were 60 degrees C / 140 degrees F or hotter.
A secondary cook step was being followed.
100 ppm chlorine sanitizer was available in the spray bottle.
A senior staff member was training a new staff member to set up 100 ppm chlorine sanitizer in the third compartment of the 3-compartment sink.
Reminder: Use 1/2 teaspoon bleach per L of water or 1 tablespoon of bleach per gallon of water to set up 100 ppm chlorine sanitizer.
The floor was free of grease buildup.
