306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The splash guard inside the ice machine had rust stains or mildew on it. This can contaminate the ice.
Corrective Action(s):
Remove the splash guard, and wash & sanitize it to remove the stains or mildew. Prior to doing this, cover exposed ice with a clean, food grade material to prevent the ice from becoming contaminated from debris when removing the guard. Or, turn off the ice machine and remove all the ice prior to cleaning the guard in place.

Violation Score: 3

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]

Purchase and place a thermometer in the upstairs fridge to ensure it is 4C or colder at all times.
**Correction date: Oct. 4/16**

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; hot holding unit was above 60C (liquid cheese); thermometers found in one cooler; and no temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation is good. No signs of pests.
- Foods stored in groups and 6" off the floor on shelves.
- AHP (7%) was being used to sanitize equipment, the sanitizer bottle was almost empty. The use of this chemical is "over kill" and recommend to throw away and use bleach to sanitize. Mix a fresh solution of 1tbsp. of bleach with 4 Litres of water every day. Throw the solution away at the end of the day, as it will decrease in strength. The solution recipe can be found on the sign posted by the hand sink.
