Observation: - Changes made to layout of food premises without approval. Handsink, food preparation sink, 3 compartment sink were installed along north wall of kitchen without prior approval.

Comments

- No food processing/manufacturering occurring at time of the inspection. Business prepares a variety of different jarred sauces (eg. Indian Salsa). Products are currently being sold directly to consumers and no longer at retail. Limited production occurring.
- Hot and cold running water supplied to sinks
- Handsinks supplied with liquid soap and paper towel
- Walk-in freezer -20C
- Danby cooler 3C
- 2 door Sanyo cooler 1C
- Walk-in freezer not in use/not turned on at time of the inspeciton
- Bleach present for sanitizing food contact surfaces and dishes. Sanitizer solution present in bucket. Concentration measured 200ppm chlorine.
- pH meter present. Buffer solutions present for calibration of pH meter.
- No signs of pest activity noted at the time of the inspection.
- Floor was re-painted (with epoxy). Surface is smooth and washable.

Operator is planning to resume catering (food service). Prior to commencing, the following must be submitted for review and a permit issued:
- Health application (status change to food service) and health permit fee
- Copy of Foodsafe level 1 certificate for Operator
- Menu (all food items served)
- Food safety procedures which clearly identify critical control points, critical limits, monitoring and corrective actions.
