Observation (CORRECTED DURING INSPECTION): Observed staff wash dishware without a sanitizing step. Scissors, bowls, and pots washed and stored away wet.
Corrective Action(s): Discussed warewashing with staff. All dishware must go through dishwasher unit for sanitizing. Allow to air dry and do not put away dishes wet.

=Kitchen chest freezer (-20C) and storage chest freezer (-19C) measured < -18 degrees C
=High temperature dishwasher had a final rinse temperature of 80.9 C at the dish surface (minimum 71 C required for proper sanitizing)
=Bleach sanitizer solution at >400 ppm chlorine in spray bottles. discussed how to make 100 ppm chlorine sanitizer solution (mix 1 tsp bleach with 1 litre of water)
=Dedicated prep sink available for food preparation.
=Ice machine was maintained in a sanitary manner
