Routine Inspection Coolers at 4 C or below. Freezer at -18 C or below. Hot holding above 60 C. Surface sanitizer registered at 200 ppm - 400 ppm quats and wiping cloths stored inside buckets. Dishwasher - plate surfaces registered at 200 ppm chlorine. Premises is continuing to use the low temperature + chemical sanitizer mode. **Hand sink closest to the servery for long term care is having drainage issues- sinks to be serviced later today. In the interim, staff are able to use the 2 compartment sink located near the dishwasher. All other hand sinks are equipped with hot/cold running water, liquid soap and single-use towels. Pest control services are in place. Staff wearing hair-nets. **Clean up spills immediately.
