Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not properly washed and sanitized.
Observation: QUATS spray bottle was measured to be at 50ppm. Operator informed that the bottle was opened 3 months ago.
Correction: Operator made a fresh solution of chlorine sanitizer measuring at 200ppm. Ensure sanitizer is made daily (if using bleach) or replaced as per the manufacturer's instructions (if using QUATS bottles).
Rationale: adequate sanitizer ensures surfaces are sanitized properly to remove pathogens and toxins that can contaminate food and cause a food borne illness.

Observation (CORRECTED DURING INSPECTION): Adequate handwashing stations not available for employees.
Observation: handsink at the front was blocked off with plastic containers in the sink.
Correction: operator removed the containers and cleaned the sink. Ensure hand washing stations are always accessible for use.
Rationale: easily accessible handsinks encourage frequent hand washing which protects food from contamination.

Observation (CORRECTED DURING INSPECTION): Food not protected from contamination.
1) Observation: bowl of meat was stored on the floor of the walk-in cooler.
Correction: Operator re-located the food to a shelf. Ensure food is stored at least 6" off the floor.
Rationale: floor is a potentially contaminated surface that can cross contaminate food and cause a foodborne illness. Food stored on the floor is also prone to pest activity.
2) Observation: plastic shopping bags were being used to store food directly in coolers and freezers.
Correction: Store food in food safe containers or bags (Ziploc bags or saran wrap) to prevent contamination. Operator replaced most items in plastic containers at the time of inspection.
Rationale: Plastic shopping bags are not food safe. They can leach out chemicals in food especially kept in extreme temperatures such as inside freezers (-18C).

The back handwashing sink and washrooms were adequately equipped with hot/cold running water, liquid soap and disposable paper towels.
The high temperature dishwasher achieved 80C at the dish surface after the final rinse cycle.
3-compartment sink equipped with plugs. Bleach is available on site.
Ice-machine in satisfactory condition. Scoop stored outside.
NOTE: general cleaning of the facility is recommended to prevent build-up of debris in hard-to-reach areas.
Overall sanitation is satisfactory.

Pest control
No signs of pest activity noted.

Administrations
Operator is Food Safe level 1 certified. Valid until February 3, 2023.
Permit is posted.
Temperature logs are available but not fully up to date.
