Observation (CORRECTED DURING INSPECTION): Uncovered ready to eat salads stored under container of raw fish.
This is a repeat violation.
Corrective Action(s): DO NOT store ready to eat foods under raw foods. Operator reorganized the cooler so salads are stored elsewhere.
Please have a dedicated spot for salads that are being served.

Observation: 1. Ventilation hood observed to be greasy.
2. Handles of prep cooler observed to be crusted with food grime.
This are repeat observations.
Corrective Action(s): 1. Please clean ventilation hood. Ventilation hood must be cleaned more frequently due to the constant deep frying. Operator states that ventilation hood will be professionally cleaned on Tuesday.
2. Please continue to clean the kitchen to ensure there is no build up of food debris and gime.

General sanitation has improved.
However, due to constant deep frying, operator must stay on top of cleaning the kitchen.
No flies observed.
