Observation: Small amount of rodent droppings noted in the following area: underneath dry storage, behind 3 level oven unit, and flour storage area. Fruit fly activity also noted in floor drain area by the large over unit.
The following needs to be done:
- Clean all rodent droppings and have the area property sanitized.
- Flush the floor drain with a cleaning agent.
- Install a fly area the floor drain area by the large oven unit.
- Incidate the problem area to the pest company and install more live traps.
Review pest report from Jan 24, 25, & 29 2018 and no pest activity was noted.

Foods stored in the display case were at least 60C.
