304 - Premises not free of pests [s. 26(a)] Observation: Small amount of rodent droppings noted in the following area: underneath dry storage, behind 3 level oven unit, and flour storage area. Fruit fly activity also noted in floor drain area by the large over unit. The following needs to be done: - Clean all rodent droppings and have the area property sanitized. - Flush the floor drain with a cleaning agent. - Install a fly area the floor drain area by the large oven unit. - Incidate the problem area to the pest company and install more live traps. Review pest report from Jan 24, 25, & 29 2018 and no pest activity was noted. Corrective Action(s): Violation Score: 3

Routine inspection and the following were noted: Walk in cooler less than 4C. Walk in freezer at -18C. Display coolers at 4C. 3 door cooler in production area at or below 4 degrees C. 200ppm quats dispensed at both 2 compartment sinks. 200ppm quats available for use in labeled spray bottles. Foods stored in the display case were at least 60C.
