-dishwashing area currently under mold restoration, operator has switched to single service utensils for resident food service, all other utensils are sanitized in the three compartment sink -pot sink quat sanitizer 200 ppm, sanitizer concentrations recorded daily -all refrigerators 4C or lower -hand sinks provided with soap and paper towels -no evidence of pests -general sanitation is excellent
