Observation: Sandwich prep cooler in front retail area was measured to be at 12C. No food was stored in this cooler.
Corrective Action(s): Adjust cooler or repair cooler so that it is capable of maintaining temperatures of 4C or colder. Ensure prep cooler is working properly prior to storing perishable food items.

Observation: Floor in production unit requires refinishing - coating has chipped off in many areas.
Corrective Action(s): Re-finish floors so that they are smooth, non-absorbent, and easily cleanable. Operator stated floors will be re-done next fall.

Note: Front retail/sandwich prep area is not in operation yet. Operator intends to start this operation next week.

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer available at 100 ppm in spray bottle
- Display coolers in front area were below 4C
- All coolers in production area were at or below 4C
- All freezer temperatures were satisfactory
- Three-compartment sink available for manual warewashing
- General sanitation is satisfactory
- Dry storage of ingredients is satisfactory
- Door between front sandwich area and production area has been removed (to provide easy access to hand sink)
- No signs of pest activity noted at time of inspection. Reminder to keep bay doors closed to prevent possible pest entry.
