Observation (CORRECTED DURING INSPECTION): Open box of patties was stored on the bottom shelf of the single-door up-right cooler.
Correction: Cover all food items that are stored in the coolers to prevent cross-contamination. Operator closed the box of patties at the time of inspection.

Observation: Note: Staff washroom hand-washing sink is not working. Hot water has been turned off as it was leaking all over the floor.
Correct at the earliest. Use the public washroom outside until the sink is fixed. Post a notice on the door of the staff washroom to limit usage.
Hot water is important for proper handwashing. It allows for a comfortable temperature to encourage handwashing.

Sanitizing and Hygiene
-3-compartment sink had 200ppm QUATS solution for sanitizing dishes.
-Sanitizer buckets had 200 ppm QUATS solution at the front and food preparation areas.
-Handwashing sinks equipped with hot/cold water, liquid soap and disposable paper towels.
-Hand sink by ware-washing sinks had a jammed paper towel dispenser. Paper towel roll was available but the dispenser should be fixed at the earliest.
-Ice machine was in good sanitary condition - no signs of mould or mildew were noted. Scoop was stored outside.

Temperatures
-Walk-in cooler was at 1.4C
-Walk-in freezer was at -18.6C
-Preparation cooler under counter was at 3C
-Patties were probed to be at 76.1C on the grill.
-Time tracking is being used to track potentially hazardous foods in preperation area. Logs are up to date. Food rotated at 10am, 2pm, 6pm.

Storage
-All packages were closed and stored at least 6" off the ground.
-No signs of pests were noted at the time of inspection.
-Tin cats were empty and UV lamp for flies was clean.
-Back door was closed, employee area is separated from kitchen.
