Observation: Faucet for handsink in cookline cracked and difficult to use properly. Faucet at double prep sink leaking badly. Clam shell lid to cooler in front station broken and parts easily dislodged from unit.

Monitor food volumes left at room temperatures for rush purposes. Limit volumes.
Keep honey garlic sauce either above 60 C or below 4 C as it is made with fresh hoe garlic. Alternatively, keep smaller volumes or use processed garlic product.
Sanitizer spray bottles - bleach solution too strong (above 200+ PPM); one spray bottle filled with alcohol? Make sure to use only for computer electronics and properly labelled for this purpose. Otherwise, use only bleach solution.
