Observation: 1) Middle island prep station cooler was at 8C.
2) Door seals for the beef burger and chicken cooler requires replacement/repair
Corrective Action(s): 1) Service or adjust cooler and ensure it can maintain 4C or less at all times to prevent the growth of pathogens and or the formation of toxins.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Upright freezer was at -18C.
-Prep coolers (salad and milk) were at 4C.
-Frosty hoppers were at 2C and 3C.
-Hot holding was greater than 60C.
-Hamburger patties were cooked to greater than 71C.
-Temperatures are checked and recorded daily.
-Quats sanitizing solution in 3-compartment sink was at 200ppm.
-Sanitizer pails tested at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Vegetable slicer/cutter were found to be clean and sanitary.
-Ice machine clean and sanitary. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the floor, covered, and protected from potential contamination. Raw meats stored below ready-to-eat foods and frozen foods thawed in the walk-in cooler.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-FoodSafe Level 1 certificates issued prior to July 29, 2013 expire on July 29, 2018. In order to meet the FoodSafe requirement, certificate must be valid/not expired.
