Observation: The ice cream scoop is being stored in a clean container at room temperature. Bacteria will grow on the scoop, between uses, as it sits at room temperature.
Corrective Action(s): Ice cream scoops shall be stored in the freezer between uses, in a clean container.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) The walls around the handwashing sink, beside the pizza assembly cooler, has food stains on it. This will attract pests.
2) The floor beneath and behind the deep fryers, and equipment in the cook station area has accumulated food, grease and debris. This will attract pests.
Corrective Action(s): 1) Clean the walls around the handwashing sink with hot water and soap, then sanitize. Ensure this is being done at least once a day, and before closing.
2) Clean the mentioned areas every night. Move the equipment (if on wheels) away from the walls so the floor beneath and behind the equipment can be cleaned. Ensure this is done on a regular basis.

Observation: There are broken floor tiles in front of the deep fryers. Food and water will get in-between the cracks, and this makes it difficult to clean. This will attract pests.
Corrective Action(s): Replace any broken, cracked or chipped floor tile and repair the floor so that it is smooth, level, durable, sealed, and cleanable.

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; thermometers present and temperature recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 73.9C at the plate's surface, as per max/min thermometer.
- Handwashing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle had 200ppm strength.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate and below RTE foods; and foods stored 6" off the floor on racks and platforms.
- General sanitation level is good. Improvement needed in the mentioned areas.
- Exhaust canopies professionally cleaned in April 2022. Next scheduled servicing in October 2022.
- No signs of pests. A professional pest company is contracted to monitor and eliminate any pests.
- FoodSafe certified staff present.
