Observation: Old mouse droppings still observed in dry food storage on bottom shelving, behind the hot water tank and on lower shelving in front sushi prep area.below. Premises now has a pest control contract in place. Traps observed in place. Weather stripping in place at base of front and back door to prevent pest entry. Did not observe any wall breaches.
Corrective Action(s): Continue to bin all food items that can be potentially be chewed into .
Clean and sanitize all areas once old dropping have been removed as discussed

Toilet repaired in handicapped washroom
Hot water fixture repaired in employee washroom
Dishwasher monitoring logs being maintained. Verified concentration in final rinse at approx 60-70ppm chlorine
Recommend using Quat as a sanitizer at a minimum of 200ppm for sushi prep areas as Quat does not impart any odor issues.
