Observation (CORRECTED DURING INSPECTION): Bleach bottle and bucket available at front had >>200ppm chlorine detected. Solution diluted at this time.
Corrective Action(s): Ensure to prepare correct concentration every time. Add 1/2 tsp of bleach per 1L of water.

Observation: 1) Better and/or more frequent cleaning required for floors underneath large kitchen equipment. Debris are removed daily, but floors need to be scrubbed to remove all grease/dust build up accumulated over time.
2) As previously mentioned, front area behind drink cooler requires better organization.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory. Temperature monitoring system in place.
-General food storage practice satisfactory. Ensure to cover pork with saran wrap before placing in walk-in for further cooling.
-High temperature dishwasher achieved 77.4'C at the plate level after final rinse.
-100-200ppm chlorine solution in a bucket available in kitchen at 100ppm.
-No evidence of pest activity observed at this time.
-Ventilation canopy hood maintained and serviced.

NOTE: Boxes of frozen meat delivered just before the inspection. All still hard frozen. To be placed in freezer within the next 20 minutes.
NOTE: As discussed at this time, do not place food (i.e. raw meat) out from the cooler too long in advance.
