Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Multiple Violations:
- Dishwasher malfunctioning. Dishwasher appears to have issue drawing sanitizer solution from main container. 0ppm measured at the plate after multiple runs and a sanitizer container swap.
- Meat slicer put away as "clean" and in unsanitary condition. Item has not been thoroughly cleaned and sanitized after the last use.
- Bucket and container fronts are dirty
- Tubs used to store food throughout are in poor sanitary condition.
- Ice machine has mould growth inside

Correction: - Dishwasher is to be repaired. Facility is CLOSED as a result of broken dishwasher.
All dishes are to run through dishwasher after its run. Each item in restaurant is to be properly washed, rinsed and sanitized prior to reopening of facility.
- Meat slicer is to be thoroughly cleaned and sanitized after each use
- All container fronts are to be washed, rinsed and sanitized tonight.
- Dump and dispose of all ice. Wash and sanitize interior of unit.

Correction: Ensure all handsinks are supplied with liquid soap from dispensing unit, single use paper towels from dispensing unit and both hot and cold potable running water at all times.

ITEMS CORRECTED:
- All contaminated food products or spoiled food products have been discarded
- Lack of cooling cooked product outdoors upon arrival of EHO
- Lack of large amounts of potentially hazardous food items stored outside of cooler units upon arrival of EHO
- Personal Items have been relocated from dishwashing area
- Cooler units have been rearranged such that raw meat products are below ready to eat food products
- Lack of improper thawing methods upon arrival of EHO
- Dishwasher achieving final sanitizing rinse of 50ppm Chlorine at the plate
- Meat Slicer has been cleaned and sanitized
- Buckets and containers have been cleaned and sanitized
- Ice machine has been cleaned and sanitized
- Rodent droppings have been removed; areas have been cleaned and sanitized
- Facility has had extensive cleaning including: exhaust canopy vents, shelves, floors, etc.
- Light cover replaced
- Poison removed
- Paper towels replaced in staff washroom
- Additional test strips obtained for low temperature dishwasher


ITEMS TO BE CORRECTED:
- Dumpster is currently full. Dispose of any items not necessary for business when it is emptied. This includes: broken lids and containers, old equipment from previous owner, any other items not used at site. Facility is TOO SMALL to hold onto extraneous items
- Some remaining dishes to be run through dishwasher - CORRECTED DURING INSPECTION. Facility allowed to reopen once all these dishes were cleaned.
- Scoops found remaining in dry storage and in unsanitary condition - CORRECTED DURING INSPECTION - items cleaned in dishwasher
- Food items found uncovered in cooler unit - Lids are to be obtained for all containers storing food items. All food items are to be covered in cooler unit
- Back door remains open, Screen is not tight fitting - obtain new screen door OR keep door closed at ALL TIMES.
- Replace aluminmum foil shelf liners for proper shelf liners
- Paint exposed and untreated wood shelf
- More cleaning and organizing to occur
- Clean fronts of dough mixers
- Clean floor of walk in cooler unit and shelves within
- Clean walls in dumpling area
- Obtain alternative to blocks of wood for freezing of dumplings (Use an item such as metal or plastic glassware that can be run through the dishwasher when dirty for the freezing of dumplings.)
- Repair broken hand sink in dim sum area (one sink already exists)
- Follow recommendations on pest reports
- Ensure dishwasher is tested DAILY
- Owners (Samuel and Jackie) to retake foodsafe level one

CLOSURE ORDER RESCINDED
- Ensure facility is testing dishwasher DAILY to monitor chlorine levels and operation of dishwasher.
- Ensure facility employs higher standards of sanitation going forward. The previous condition of the kitchen was unacceptable and lead to the closure order issued yesterday.
- Ensure higher standards of food safety are employed going forward. The previous day's food handling practices were unacceptable.

This facility will be monitored closely. The next follow up inspection is next week. It is crucial that all outstanding items are corrected for this date.
