Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained below -18 degrees Celsius.
Hot holding (for rice) maintained above 60 degrees Celsius.
- General food storage practices satisfactory:
All food items covered with a food grade cover/lid.
Raw meats stored separate from ready-to-eat foods.
Scoops for bulk dry products stored in a sanitary manner to prevent contamination.
- Chlorine (bleach) sanitizer in spray bottles >200 ppm.
*****Reminder: in order to obtain a 100-200 ppm concentration level of chlorine, put half teaspoon bleach per litre water.*****
- Chlorine (bleach) sanitizer in bucket = 200 ppm. Wiping cloths stored in sanitizer solution - good.
- High temperature dishwasher sanitizing with 76.3 degrees Celsius at final rinse after first attempt.
- Dry storage area organized and clean.
- General sanitation and maintenance of facility very good.
- No signs of pest activity at the time of inspection.
- Ice machine clean.
