Observation: EHO observed staff member remove baking pans loaded with baked bread from oven and proceed to take pans filled with fresh baked bread and hit bottom corner of pans on floor to loosen bread from baking pans.

Corrective Action(s): This is not best practice. Discussed with Bakery Manager at time of inspection. Procedure is to hit baking pans on counter not floor. To be discussed with staff today. Immediately cease this practice.

Observation: Rodent droppings observed on lower shelf. Bakery Manager informed.

Corrective Action(s): Remove all items from shelf. Clean and sanitize affected areas. Use 200ppm Chlorine/QUAT or other sanitizer solution.

Observation: Sanitizer dispensing unit not dispensing sanitizer solution at 200ppm QUAT as recommended by Manufacturer.
Discussed with Bakery Manager and unit was dispensing appropriate amounts earlier today but now is not.

Corrective Action(s): Unit requires service from technician. Ensure technician is contacted immediately.
Use dishwasher for ware washing and other dispensing units for refills of sanitizer solution until such time as unit can be serviced.
