Observation: In-use utensils for rice and falafels stored at room temperature.
Corrective Action(s): In-use utensils need to be stored at 4 degrees Celsius or less OR 60 degrees Celsius or higher to prevent the possibility of bacteria growing on the utensils. In-use utensils were washed and sanitized at time of inspection. Discussed with operator various options that can be considered to meet this requirement.

Observation: Drain plugs are missing for the 3-compartment sink.
Corrective Action(s): Drain plugs are required for each compartment of the 3-compartment sink to allow for proper ware-washing using the 3-compartment sink method. Provide 3 drain plugs and keep them near the sinks.

Comments

General observations:
Coolers were 4 degrees Celsius or less.
Freezer was less than -18 degrees Celsius.
Hot holding units were over 60 degrees Celsius.
Coolers and freezers equipped with thermometers.
Food storage practices are good.
Storage areas are organized.
Food handler hygiene appeared satisfactory.
Hand sink was stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation is good.
Chemicals are stored in a safe manner.
No signs of pests.

Notes:
Discussed with operator about the submitting his food safety and sanitation plans which are due by the end of October 2018 as per the previous inspection. Informed operator that if he should contact the undersigned if he has questions or needs assistance in preparing these plans. The sanitation plan should also address how to properly store in-use utensils.
Operator is also selling pre-cooked samosas from Aggarwal Sweets in Surrey. Reminded operator that all foods served in this premise must be included in the food safety plan.
