Observation (CORRECTED DURING INSPECTION): At the time of inspection bleach sanitizer concentration in spray bottle well over 200ppm.
Corrective Action(s): Ensure a 100ppm bleach sanitizer solution is prepared and avaialble for sanitizing food contact surfaces. General sanitizer solution: 1 oz of regular unscented bleach to 1 gallon of water.

Observation: Freezer 1 and 2 in the downstairs area ambient air temperature ~ -12 to -13 degrees C. Freezer 1 had some ice buildup.
Corrective Action(s): Ensure all frozen potentially hazardous foods are stored at or below -18 degrees C. Adjust the temperature settings and/or defrost to remove ice buildup. Correct by 18, 2022. Note: operator mentioned potential replacement of freezer 2.

Routine inspection:

2 compartment sink provided with liquid soap and paper towels.
Dishwasher registers 73 degrees C at the plate surface during the final rinse cycle.
After correction, 100ppm bleach sanitizer solution available for use in a labeled spray bottle.
General sanitation is satisfactory.
Domestic cooler at 4 degrees C. Freezer section at -11 degrees C. Monitor and ensure -18 degrees C.
Upright cooler at or below 4 degrees C.
Hot holding on stove at or above 60 degrees C.
Foods are all served within 2 hours.
Downstairs area storage area clean and organized. Freezer #3 at -18 degrees C.
Permit posted in the kitchen.
FOODSAFE requirements met at time of inspection.
